Nowadays the international scientific community has recognized unanimously the advantages of the use of olive oil in the diet, as well as vegetables, nuts and honey, cereals and fish, and the moderate use of wine, cava and fresh and preserved meat. That’s something that our ancestors had already discovered some hundred years ago.

Gastronomy in the Costa Blanca

Fish and shellfish from the bay, together with fruits and vegetables from the nearby farms, and with the most prestigious local wines, make up the core of a healthy and natural gastronomy in which the basic ingredient is the rice.
Among the countless offers of rice recipes - there are more than
three hundred catalogued different recipes, the outstanding recipes are: arroz “a la alicantina” (mix of meat, fish and shellfish) and “olleta” (with vegetables and different kinds of sausages).
The typical dessert is the Turron, and the genuine varieties of Jijona (soft) and Alicante (hard), accompanied with Fondillon, a local wine, an ethnologic jewel, for which there are records from the sixteenth century.
Very typical are the dried salted fish such as Mojama (Tuna), Hueva (fish eggs), Bonito (another kind of Tuna) y Marrajo (shark). Also very typical are the ‘cocas’, salted, ‘amb tonyina’ (tuna), or sweet ‘coca boba’, spongy cake. When it comes to apperitives, ‘tapas’, the typical ones from Alicante are the ‘montaditos’ , small sandwiches stuffed with all typical ingredients.
